Based off of the post on the front page of a list of cars consisting of ebay finds with prices under $15,000 - here are my suggestions. There are other cars I would have loved to include, but sadly no examples could be found on ebay currently.
10: Morris Minor Convertible
Everybody needs to get behind the wheel of a Morris Minor at least once - Britain’s first million seller - and what better variant to own than the convertible?
9: Trabant 601S
The national car of East Germany, the Trabant is both historically significant and as much fun to drive as is possible when you’ve only got 27hp to deal with.
8: Willys CJ 3B Jeep
Few vehicles are more fun than an old flat fender Jeep. Most are in awful condition or tastelessly mutilated, but this one is quite nice. Be willing to get it dirty.
7: Suzuki LJ10
What may possibly be more fun than an old jeep? A Suzuki LJ10. Powered by a 2-cylinder, air cooled engine, these vehicles are extremely light and can go some places other heavier vehicles may not want to go or even be able to fit.
6: Datsun Bluebird
The 240Z or Fairlady would be the obvious choice - and if you get the chance to drive one you should. But - the Bluebird is the car that really kicked off Datsun’s success in the U.S. and gave birth to the sought after and much hyped 510. The 510 may have a larger reputation, but the 410 Bluebird has all the style.
5: Fiat 850 racer
Technically this car breaks the $15K budget by $100 - but it’s a BIN or Best Offer sale - so it’s here. The 850 was the sportier, sexier, younger sister of the 600, and a car that is fun enough in stock form, so I can only imagine this one is amazing fun.
4: Studebaker Daytona Wagon
Well there had to be a wagon at some point - so why not a Studebaker with a 259ci V8 and a retractable roof?
3: MG MGB
Want a true sports car with fold down roof and wire wheels? This 1972 MGB predates the rubber bumper era and looks great. You need to know what it is like to drive inches off the road and with no roof over your head.
2: Subaru 360
One of the most important vehicles in Japanese car history - the Subaru 360 not only launched the Subaru brand, but was one of the first genuinely original and innovative vehicles produced by a Japanese maker. Plus it’s cute, comfortable, maneuverable, and lots of fun to drive.
1: Mazda RX-7
You need to drive an RX-7. You just do.

I feel like one of these cars pictured maaay get to 60 in under 10 seconds, and it's a race car. I'm not a speed guy, but I guess I totally am

If your idea of the epitome of driving fun is accelerating up an on ramp, then none of these car will be that interesting.

Good lord why would you choose this fugly thing? The CJ3A would be better, with a twin-stick Spicer 18 transfer case and the trusty old Go Devil engine.

Full agreement on RX-7. My college roomate would let me drive his when he needed to borrow my Pinto wagon to shag his girlfriend. (a full 6 feet with back seats folded down!)
The Mazda was shockingly fun to drive...eager to rev, eager to corner...just magic. The one I drove was a clone to the one pictured. I might also add they were a joy to work on. I replaced the clutch on my back in the apartment parking lot in 3 hours flat.

For $15K or less, you can get a used RX-8 in decent condition... which is a quite a bit faster than the old RX-7 you’re talking about.
But it’s not just about power, but also about how the car feels and the overall driving experience.
